What to EAT

So often times we focus on “what not to eat or what we should avoid,” so today lets focus on what we should be eating!

The less processed and the more pure in nature the better! Here’s my top categories to focus on:

  1. Meat and Poultry: Grass-fed beef, lamb, bison, organic free-range pastured chicken and turkey
  2. Eggs: Organic free-range and preferably pastured is your best choice
  3. Fish: Wild caught fish (choose wild over farm-raised) such as Alaskan Salmon, Haddock, Mahi, Snapper
  4. Healthy Fats and Oils: Yes that’s right, eat the healthy fats! Coconut oil, cold-pressed olive oil, grass-fed raw butter, cod liver oil. Nuts and Seed varieties such as almonds, pecans, walnuts, cashews, sunflower seeds, hemp seeds, chia seeds, organic raw nut butters and seed butters. Utilize nut and seed flours instead of processed white flour; healthy nut flour options include almond flour, coconut flour, cashew flour.
  5. Vegetables: dark leafy greens like kale and spinach, Brussel sprouts, asparagus, broccoli, cauliflower, cucumbers, and many more,,,, just be sure to follow the guidelines from the Clean 15 and Dirty Dozen for choosing organic vs conventional produce.
  6. Fruits: Berries, apples, grapefruit, avocado, lemons, and limes… just be sure to follow the guidelines from the Clean 15 and Dirty Dozen for choosing organic vs conventional produce.
  7. Dairy: If you can tolerate dairy, be sure to choose the safest dairy selection possible. The best available is Raw, grass-fed, pastured dairy, this can be found in raw butter, raw milk and raw cream, raw cheese, and cultured yogurt and kefir. Garlic and Bean Dip

Quick and healthy snacks are always a hit in our household. So I was recently testing out some options for making fun, hummus-like dips with other types of beans, and have been enjoying this garlic-yyyy dip with fresh veggies and grain-free crackers. This is SUPER EASY and quick to make, and can be quickly adapted to your own likings. If you don’t like a strong garlic taste, you can omit the garlic clove and opt for garlic powder or leave the garlic out and have a simple bean dip.

Garlic and Bean Dip

Ingredients:

1 can white beans (cannellini beans), drained and rinsed (prefer Eden brand beans)

1/4 – 1/3 cup organic olive oil

2 Tbsp lemon juice

1/2 – 1 clove garlic

1-2 tsp dried parsley

Sea Salt to taste

Directions: Add all of the ingredients to a high power food processor or blender (such as the Vitamix) and puree until desired consistency. Will last in refrigerator for several days and makes a delicious quick snack with fresh raw veggies or grain-free crackers. Can also be added to a meat dish or on top of a salad for a unique twist! Some add-in’s to this recipe can be: olives, roasted red pepper, roasted garlic, sundried tomatoes, or spinach.

This pairs great with our Rosemary Cracker Recipe. We also enjoy the Go Raw crackers, it’s one of my son’s favorites, and they are delicious dipped in this bean dip.

Raw Food Restaurant- The Cider Press Cafe in Naples, FL

I always love testing out new recipes and the healthy restaurant options available to us. On a recent anniversary trip to Naples, Florida, my husband and I had the opportunity to test out a raw food restaurant: The Cider Press Cafe

It was divine and didn’t disappoint! We actually had trouble figuring out what to order because everything looked so delicious. We ordered the Flatbread to start. This is grain and gluten free and dehydrated in house. It’s then topped with tomato pesto, herbed cashew ricotta, lemon olive tapenade, caper berries, and sweet basil. It was amazing! We then ordered two entrees to share. The Garden Lasagna – made with tomato, zucchini, sun dried tomato marinara, herbed cashew ricotta; basil walnut pesto, and served with onion bread with basil butter. We also shared The Three Amigos raw tacos – made with three walnut picadillo tacos, guacamole, pico de gallo; and poblano macadamia cream. We devoured our food and enjoyed the energy high that comes with eating natural raw foods! Here’s a few pics of our lunch:

GMO health concerns and the USDA

The USDA is in charge of the national organic program, however, there are a few facts you should know.

Do not trust the USDA!

Although their stamp of organic goes a long way, there’s no guarantee. Over time we have seen the FDA endorse food additives, chemicals, GMO, and many more disease causing foods so you must be your own investigator.

Read through this paragraph that came DIRECTLY from the USDA site and you will see they support GMO:

“Welcome to the USDA’s Agricultural Biotechnology Website: The USDA supports the safe and appropriate use of science and technology, including biotechnology, to help meet agricultural challenges and consumer needs of the 21st century. USDA plays a key role in assuring that products produced using biotechnology are safe to be grown and used in the United States. Once these products enter commerce, USDA supports bringing these and other products to the worldwide marketplace.”  (http://www.usda.gov)

Why are GMO’s such a problem? When a crop is genetically modified, it allows the crop to produce its own pesticide which protects it from dying when sprayed with pesticides and herbicides, particularly “Round Up” made by the Monsanto Company. This same company is the producers of the GMO seeds. Coincidence?? I think not! So now the crop has been genetically modified and then sprayed with round up. Does that sound appetizing? Do you want to feed this to your children? You might be saying NO and shaking your head to this but you are feeding this to your children. If you are buying any of our standard American products that contain high fructose corn syrup, corn syrup, soybean oil, soy oil, or soy period,,, then you are consuming genetically modified substances.

Have you seen the French scientists’ long-term study of GMO effects on rats? The rats get tumors the size of baseballs and die an early death.

Since one of the heads of the FDA, Michael Taylor, used to be a lobbyist and vice president of Monsanto, don’t look for regulations any time soon, especially since Obama appointed him and the re-election is set in stone. Also, watch for articles, lawsuits, and companies that sell out from organic to corporate run pseudo-organic. They are caving by the numbers. It’s all about the money, until people get cancer and can’t buy their way out of it.

What can you do?! Demanding GMO labeling on all products is a huge start, you can also make sure to buy only from reputable companies and getting 100% organic ingredients. The two top GMO crops are corn and soy! I personally stay away from all corn and soy products! If a label has corn or soy in it, I don’t use it! That’s the best way to be safe. Be aware that most restaurants use corn oil or soy oil for their frying and oil needs. So choose wisely when eating out. Start reading your food labels and also check out your local farmers markets. If you get to know your local farmers you can learn from them what they are doing in their fields to keep their crop safe! This will help keep you and your family safe!

Do you ever have one of those days where you just desire something totally out of the blue?! Today is one of those days for me. I saw a picture of key lime pie in a food magazine and it hit me, I want key lime dessert! So I immediately went to my recipe collection and found one of my old favorites, Key Lime Cheesecake! It always hits the spot because it gives you the key lime pie and the cheesecake sensation all in one. The best part, it’s cellular healing diet approved.
